Sleep
Sleep is the state of computer in which it goes for suspended animations. Sleep mode means to stop all work you are doing and seems that computer is turned off. Purpose of sleep is fast recovery to your work after some break. Electricity is used in sleep mode because the computer never shut down completely. During sleep mode, current data will be stored in RAM or temporary files. Computer takes few seconds to fully boot after sleep mode. Mostly sleep mode takes 5W to 10W of energy in one hour. Electricity use by Hibernate depends on the type of computer. It consumes 2W power in one hour or even less than this.
Hibernate
Hibernate is another state used to pause all current work. Hibernate saves all current work in to hard disk and stop all computer components from working. All data goes to hiberfil.sys file that could be huge file having size in several GB.
Sleep Vs. Hibernate
Their performance depends on your specific computer. Both are good to use. Hibernate consumes lowest power but still sleep mode is more significant than Hibernate. In Hibernate most of the computers need more power to start again from shut down. In sleep mode you don’t need to boot up. It is best choice to use Hibernate when you want to boot up with less speed and you are ready to leave computer for more time period. Choose sleep option when you plan to leave computer for short time.
